TIG is slower and it is the right answer for stainless and aluminum: controlled heat, minimal tint, no spatter, and a bead clean enough to dress back flush. That is what lets a food-grade 316 seam be finished with no crevice left behind.
MIG is the right answer for structural steel, where deposition rate matters more than appearance and the weld gets coated. We fit and tack the whole assembly before any final pass, so distortion is controlled rather than corrected afterwards.
